Carrot and yoghurt raita

1 carrot
½ onion chopped
1 green chilli chopped
1 cup yoghurt
2 tablespoons water
1 sprig coriander leaves
Salt to taste
Juice of 1/2 lemon
1 tablespoon oil
1 sprig of curry leaves
1 dry red chilli chopped
1 teaspoon mustard seeds

Method

Grate carrot, chop the onions and green chilli. Beat yoghurt adding about 2 tablespoons of water. Mix together in a bowl the chopped onions, grated carrot, green chillies and chopped coriander leaves. Mix in the salt and the beaten yoghurt and lemon juice.

In a frypan heat the oil and fry curry leaves the red chilli, curry leaves and mustard seeds. Remove from stove and add to mixture.
