Dear Deirdre

Thank you for your enquiry. Here is the recipe for a green coconut sambal that goes with vaddai. I presume it is ulundu vaddai (urid dhal vaddai)

Sarogini

COCONUT CHUTNEY

Ingredients

1/4 lemon
1 - 2 fresh green chillies
1 teaspoon salt
1 cup desiccated coconut (soaked in 1/4 cup hot milk)
1 teaspoon oil
2 teaspoons mustard seeds
2 teaspoons cumin seeds

Method

Peel lemon, cut into pieces and remove seeds. Place lemon pieces in a container of an electric blender together with the chopped chillies and salt. Blend until pureed. Add coconut and continue blending to smooth paste.

Heat the oil in a small pan and fry the seeds stirring quickly until the mustard seeds begins to pop. Mix with the blended coconut mixture and serve.
